Back for the 6th year, Bite Week is where taste meets hands-on experiences. Four days of tasting and education including chefs’ dinners, demonstrations, classes and cocktail experiences hosted at locations throughout Bend. Bite Week is your opportunity to learn new flavors and techniques from some of Central Oregon’s best.

This year’s Bite Week Chef’s Dinners take you far and wide. Each dinner offers unique experiences. At the peak of early summer we invite you to travel close to home to a farm and vineyard not generally accessible to the public, as well as to Redmond, where the best Caribbean food in Central Oregon is to be found. And close to home Currents, one of the most beautifully sited restaurants in town gives their new chef a chance to strut his skills.

A Caribbean Flight of Fancy Chef's Dinner

Join Chef Zoë Ditmore and Wild Ride Brewing on a culinary tour through the isles of the Caribbean. Featuring cuisine from Jamaica, Barbados, Trinidad and Tobago, with craft beer pairings from Wild Ride Brewery.

This will be a five-course dinner, including beer pairings.

About the Culinary Team: Zoë Ditmore is the owner of The Jerk Kings, and along with her dedicated staff, operates two food carts specializing in Caribbean cuisine. One cart is located at Wild Ride in Redmond, the second will be opening in Bend this Summer. Zoë was born and raised in Barbados, a small island located in the SE Caribbean. After moving to the U.S. with her family, she attended the Cascade Culinary Institute in Bend, and graduated in Spring 2013. Now that she calls Central Oregon her home, Zoe is delighted to be able to share some of her Caribbean cuisine!

Wild Ride Brewing is a production brewery and tap room located in the heart of downtown Redmond, Oregon. Open 7 days a week from 11am – 10pm, with food options available from the food cart community located in the parking lot just off the patio. Rainshadow Organics is hosting a truly authentic farm-to-table dinner as part of Bite Week. Culinary masters Rebecca Sokol of Rainshadow Organics and Wendy DiPaolo of Willow Camp Catering are collaborating to serve up a hearty gourmet meal prepared entirely from this highly diverse organic farm.

Expect a 45-minute drive from Bend. Be sure to wear comfortable shoes for an optional garden tour accompanied with wine and passed appetizers. Enjoy live music while eating food right where it’s grown. Bring warm layers for sundown.

Silver Moon Brewing, the third oldest brewery in Bend, takes pride in brewing stellar, balanced beers. No overly-bitter hop bombs here! Just an array of deliciously balanced hops, malt, water and yeast. The newly renovated downtown-ish pub has a comfy, locals feel featuring a friendly, knowledgable staff, traditional pub fare and features handmade accents from local artisans.

Join Michael Stanton, executive chef at Currents, as he draws on his deep experience in the culinary world to highlight the local distilled spirits and seasonal foods of Central Oregon. The site is one of the most scenic in Bend, weather permitting on the deck along the river. This will be a five-course dinner, paired with spirits selected from local distilleries. Courses will be matched with straight spirits and some with cocktails, demonstrating innovative ways to pair.

Savor the taste of Tuscany as the sun sets over the alluring Faith Hope and Charity Vineyards in Terrebonne. Nestled between McKenzie and Buckhorn Ridges, the 300 acre farm boasts an exquisite view of the vineyard’s namesake, The Three Sisters Mountains: Faith Hope and Charity.

Guests will enjoy bruschetta and a glass of wine as they are treated to a private tour of the 15 acre vineyard by owners Roger and Cindy Grossmann. Join us on the patio for a five-course meal that features a Tuscan flare, accentuating fresh, authentic, unadulterated flavors of fragrant herbs prepared by Chef Elizabeth Grundy and perfectly paired with our newly released Oregon wines by they vineyard’s wine specialist Kjersten Vimmerstedt. As the stars come out, dance the night away to the sounds of Old Italy.

BITE WEEK CLASSES

Bite Week classes offer home enthusiasts a chance to work with and learn from some of the most experienced culinary professionals and purveyors in Central Oregon. Some even include the chance to learn with your child, like the Bon Bon class taught by Kindred Creative Kitchen founder Michelle Morris. Each class is structured to send you home with new information and skills along with recipes—and most include cocktails. Give yourself over to this rare chance to up your culinary game for the summer ahead!

Join Michelle Morris, founder and owner of Kindred Creative Kitchen, for chocolate tasting and bon bons. Learn how to temper chocolate for molds, make a hazelnut ganache and place finishing decorative flourishes on Bon Bons. Opportunities for hands-on training at different points in class. As a former instructor at Cascade Culinary Institute, this is a specialty of Morris’s—students will leave with recipes and insider tips on successfully working with chocolate.

This class is appropriate to bring a child age 10 or older. Or you can just bring your inner child if that’s more appropriate!

The Spice Merchant's Secrets

Join owner of Savory Spice and spice merchant Matt Perry in exploring the culinary history of a handpicked assortment of the most exotic forward- trending spices and seasonings found in his Old Mill District shop.

Taste and learn how to incorporate spices into your foods, drinks and desserts. Matt will demonstrate and students will help and taste the results, including cocktails! Go home with new ways of looking at and preparing dishes, complete with recipes. Get spicy this summer!

With the help of Kim Cress from Navidi’s Olive Oil & Vinegars students are in for some enticing and easy ideas to impress family and friends using Navidi’s Olive Oil and Balsamic.

Leave class with some great take home recipes and inspiration to get cooking in your own kitchen, using healthy oils and vinegars. Sip cocktails while sampling creative dishes in a fun, laid back atmosphere.
